well, I like to thinly slice it and dip it in egg batter (if you eat eggs in your diet) and bread with flour, salt pepper and garlic powder.then you can fry them for a minute or two on each side, until they brown and are tender to the touch by fork.Then make/buy a marinara sauce.... Add in some fresh sliced sauteed mushrooms. Top the eggplant with the sauce and then some cheese like mozzarella (if you eat cheese that is) then put it under the broiler for a few min til the cheese melts and gets bubbly!Simple but yummyIf you like spicy,,, you should look up under Thai cooking Green Curry Chicken.... I know, but leave the chicken out... I have never made it, but the eggplant soaks up the flavor of the green curry juice and ...,,mmmm mmmmm.Good luck!o ps Im sorry but if you dont eat eggs, you may need to find something else to dip the eggplant in to hold the flour batter
